Current food products use materials sourced from various types of agricultural products. The origin of the raw materials and the processing needs to transform the raw materials into consumable food products are important to understand the entire food systems. This course focuses on the agricultural products/materials and the principles and technologies applied to turn the raw materials into foods. Foods included in this course are fruits and vegetables, cereals and grains, dairy products, and meats. The focus of this course is on post-harvest technologies to ensure food safety and quality.

Prerequisite: CHEM 104 and CHEM 105 and credit or concurrent enrollment in CHEM 232.
