Credit: 1 hours.

Examines the dangers, costs and prevention of foodborne illness as well as the training and motivation of food service employees in sanitary food handling and quality assurance practices. Upon completion of this course, student will be eligible to apply for the food service sanitation certificate issued by the State of Illinois.

Prerequisite: FSHN 101 and FSHN 232, or consent of instructor; MCB 100 and MCB 101 recommended. Course should be taken concurrently with or prior to FSHN 340.

PLEASE NOTE: THIS COURSE IS MOSTLY SELF-PACED, BUT CLASS WILL MEET IN FACE-TO-FACE FORMAT ON AUGUST 27 AND OCTOBER 15. First class meeting is August 27; last class/national certification exam is October 15. Registration is restricted to Hospitality Management and Dietetic majors until after junior registration, and then remaining seats open to all majors. FSHN minors must contact the department office for registration authorization (333-1324).
