Section Info:
Biopsychology of Ingestive Behavior: Why do we eat what we eat? This course provides a taste of the science including both biological and psychological basis of ingestive behavior and the adoption of both healthy and maladaptive behaviors concerning eating and drinking. We will review and integrate historical theories with recent research on how we perceive flavor, the development of food preferences, and the biological basis of hunger, thirst, and satiety. Students will also have the opportunity to strengthen their critical thinking skills by participating on two debates in which equal number of arguments will be formulated to support or refute important issues in the field of food science and human nutrition.

The importance of genetics and epigenetics in nutrition is a significant way to understand the establishment of a more personalized approach to diet and health. Understanding both the role of diet in the varying expression of a genome and the role of epigenetics in the varying responses to diet is fundamental to understand human health. It is known that individuals are responding differently to the same dietary intake which establishes a challenge for both scientists and health professionals. Moreover, this particular field is becoming a significant target in order to provide a better understanding of health-diet-disease interactions. Therefore, this course will offer the information of 'how food affects our body functions and how diet differs for each individual?' which will support the development of better food products, optimize nutritional counseling and improve individualize diets in the future. This course will help students to learn basic genetics and epigenetics. More importantly, it will ensure better nutritional knowledge for students and help them to be aware of their nutritional advice for the public generally.

Transport in Food Biopolymers

This section of FSHN 595 requires registered students to have successfully completed a physics or a calculus course at the undergraduate level.***The course will cover heat and fluid transport concepts for solving problems of importance to food and biological systems. Students will develop basic understanding of engineering models for working with these problems and obtain the solution using the finite element method with help of a software package. The overall focus will be to develop an understanding of an advanced computational tool that could be combined with the experimental data for optimizing the transport processes and understanding the underlying physical mechanisms.
