Focused on the entire food chain from growth of cacao through processing, production and marketing of chocolate, including the nutritional aspects/health benefits of consumption of chocolate and issues surrounding cacao farmers and fair trade. The focus of this course will be a mixture of hands-on activities with lectures based on student interaction and learning. Study Abroad optional.

Prerequisite: Restricted to undergrad students.
