Examines the chemical aspects of major food components; water, carbohydrates, proteins, and lipids; properties of pigments, salts, and food dispersions. Undergraduate Food Science majors must enroll concurrently in FSHN 416.

Prerequisite: CHEM 232 and CHEM 233.

Students will need a a web cam, working external microphone/speakers or headset with microphone and reliable high-speed Internet. Access to scanner capable of producing .pdf files required for exam. This section has one or more proctored exams, which may carry additional fees. Proctoring options include fee-based ProctorU and approved proctoring centers, and testing facilities located at the Online & Continuing Education offices on the Urbana-Champaign campus, which carry no fees.
