Section Info:
This course explores the gut microbiome and its influence on animals’ health, nutrition, and physiology. Students will learn about microbial diversity across niches, factors shaping gut communities, and the roles of microbiota in host function. Emphasis is placed on current methods for microbiome analysis, including bioinformatic tools and data interpretation. Through discussions and literature review, students will examine emerging research, opportunities, and challenges in studying microbial ecosystems in animals.

Food & Industrial Fermentation
Section Info:
In this module, students will learn the basics of Lactic Acid Bacteria, Saccharomyces cerevisiae and fungal biology and their application in food fermentations (yogurt, cheese, sauerkraut, bread, beer, etc.). The application of fermentation to create food ingredients (amino acids, enzymes, nucleotides, etc.) will be discussed. Students who previously took FSHN 471 may not take this section of NUTR 510 for credit.
