Discusses the evolution of the food system to meet the needs and desires of a complex, heterogeneous society. Provides an overview of food in relation to nutrition and health, composition and chemistry, microbiology, safety, processing, preservation, laws and regulations, quality, and the consumer.

This section of FSHN 101 is offered Monday, May 14 through Thursday June 7, with the final due on Friday, June 8 at 11:59 pm. The course will run asynchronously weekly Sunday through Thursday, with a 2 hour synchronous session 11 am–1 pm each Wednesday (May 16, 23, 30 and June 6). The Wednesday sessions will be study sessions during which students can ask questions about the material before the end-of-the-week assessments which are due on Thursdays at 11:59 pm.
