Topic: "Eating America: Food, Race and Ethnicity." Meets with ANTH 399, CRN 52533, section MM. How does one imagine America through its so-called ?ethnic foods?? This course will examine the emergence and the flourishing of American ethnic foods as they are represented in history, ethnography, film and fiction. We will examine how food functions as a medium for the expression and articulation of race and ethnicity in the United States through the prisms of labor and migration history, the emergence of ethnic restaurants, the roles of cooks and cooking and mass media (including television and film) in the creation of the multi-ethnic gustatory tableau that comprise the American table.
