Topic: Honey. Honey is the nectar of flowers, collected, transported, regurgitated, concentrated and biochemically processed by Apis mellifera, the Western honey bee. This course examines how bees make honey, what they do with it, and what factors influence its properties. In addition, the ways humans use honey in baking, beverages, food processing, and medicine will be discussed, and the current health of honey bees and the honey industry will be covered. Class activities will include, among others, honey tasting, honey chemistry and field trips. First Year Discovery Program Course. Registration restricted to freshmen. Students should enroll in only one Discovery course.
