Current issues affecting the safety of the food supply including emerging pathogens, food additives and pesticides, genetically modified organisms and new technologies will be evaluated in the context of current scientific knowledge, United States food law, and consumer opinions.

Academic Outreach restrictions and assessments apply, see http://www.outreach.uiuc.edu. Class meets each Wednesday night at the Oak Brook Multi-University Center. January 27th - May 12th from 7-10 pm and Saturdays 9am - 1pm. Saturday meetings on 2/17, 3/17, 4/14, 5/5, and 5/12 from 9am to 3pm. The following Saturday dates of 2/17 and 5/5 will be 11am to 3pm only so as not to conflict with FSHN 460 for those taking both courses.
