This course will critically examine U.S. food systems through the lenses of equity, sustainability, leadership, and inclusion. Students will explore how historical and contemporary structures have shaped food access, labor, environmental impacts, and community well being, while questioning what is required to work towards a truly just, accessible food system for all. Through an emphasis on dialogue, case studies, and the connection of theory to real-world challenges, students will be equipped to think critically about what meaningful change in food systems could look like.
