Studies of selected topics in Food Science. Study may be on specialized topics in any one of the following fields: food chemistry, food microbiology, nutrition, food processing/engineering. Lectures and/or laboratory.

1 to 4 graduate hours. No professional credit. May be repeated if topics vary. Students may register only once for a given topic. Prerequisite: Graduate level status or consent of instructor.

Section Info:
Title: Nutrition Counseling and Treatment for Eating Disorders *** Prereq: FSHN 420 or consent of instructor. Students should have a fundamental understanding of anatomy and physiology as it relates to nutrition and be able to apply the Nutrition Care Process to disease treatment. *** Description: This asynchronous online course will examine the prevention and treatment of eating disorders, with a focus on nutrition counseling and therapy as provided by a Registered Dietitian. It incorporates guest lectures from multiple disciplines and provides opportunities to learn about and practice counseling techniques in simulated scenarios. Each week will include recorded lectures, readings, an activity, and a quiz.
